The Master Chef has been internalising a complicated situation in his head! (Epic Stout Brownies)

Epic Thornbridge Stout Choc Brownies


So a couple of weeks ago, instead of our normal meet, we were treated with a road trip to Epic HQ in Mt Wellington.

As the Master Chef, I needed to to stop and think of what to bring.  So I sat down to “PUZZLE Time” and internalised a complicated situation in my head…  After some time I figured that ghost chips weren’t going to cut the mustard 😛

I came up with “Epic Choc Brownies”

Here’s how to make them:

Makes: Well depends on how small you cut the pieces, I cut it into 16

Preparation: 30-35 mins

Cooking Time: 25-30 mins

300 ml of Epic Thornbridge Stout (this leaves you with 200ml all to yourself!)
1 Cup all-purpose flour
3/4 cup of cocoa powder
1/4 teaspoon salt
85 gm unsalted butter
225 gm dark melting chocolate bits
135 gm white chocolate chips
4 large eggs at room temp
1 cup caster sugar
180 gm chocolate chips
1/4 cup of icing sugar for dusting

Oven: Preheat to 190 degrees Celsius

Bowl 1: Sift the flour, cocoa powder and salt into a bowl and mix well. Set aside.

Melting the chocolate: Combine the butter, dark chocolate, and white chocolate.

Then melt.

That’s the tricky part; I tried this once before with a “Double Boiler” or “Bain-Marie”, which is when you boil up some water and then put another bowl over the water, and let the mixture melt over the heat, but what I found was that the chocolate went all mental and separated.  The way I found was best for me is to combine all the bits above and use the microwave on a low heat and melt the stuff that way, but what ever works for you.

Bowl 2: Beat the eggs and sugar until light and fluffy. Add the melted chocolate mix and stir until  combined.  Beat the flour mix in then and then slowly add the beer (which is at room temp) whisking all the time.  The mix may seem a bit thin but it’s OK.

Baking Pan: Pour the brownie mix into a well greased or non-stick brownie pan or a flat pan with bigger sides.  At this point I sprinkle the chocolate chips over the top, some may fall down to the bottom of the pan but that makes it nice.

Oven: Bake for 25-30 minutes. Remove, turn out on to a rack and cool.  Dust with icing sugar then cut to size.

These are very “EPIC” Brownies so enjoy!

Recommended beer match:  Epic Thornbridge Stout of course.  If you can get it, the Oak Barrel Aged Epic Thornbridge Stout is even better!
